Thai The Savory Isan Foods The food of the Northeast region (known as Isan) is very popular throughout the country and can be found at many street stalls in Bangkok. The flavors tend toward the savory and include a lot of tasty preserved sauces, fresh herbs, fermented fish, and liberal use of the barbecue. Sticky Rice Glutinous rice forms the mainstay of Isan cuisine, normally rolled by the right hand into small mouthfuls, then dipped into various dishes before being popped into the mouth. A sticky rice meal can be filling, bringing not only a feeling of satisfaction but also sleepiness for an hour or so afterwards. Famous Dishes Isan is most famous for two dishes that appeal to just about any palate: gai yaang, barbecued chicken marinated with lemon grass, garlic and coriander, usually served with a tamarind chili sauce; and somtam, shredded green papaya with lemon juice, fish sauce, tamarind, sugar, tiny crabs and chilies pounded together in a mortar and pestle. These are always a big feature at the region’s many festivals. Another firm favorite is nam tok; delicious dish barbecued beef (or pork) is sliced and cooked in a sauce of lemon juice, lime leaf, basil, spring onions, shallots and fish sauce, and eaten with sticky rice. Local Delicacies Some visitors may flinch at the more bizarre side of local food; side dishes of down-home delicacies introduced into the daily diet through necessity. However, the more adventurous might like to try the ant larvae soup, deep fried beetles and barbecued lizard - after all, you don't know what you're missing 'til you try. |
